In this role, you will lead and manage the butchery section, overseeing junior staff and collaborating with other kitchen departments to deliver top-notch dishes. Your responsibilities will include executing precise cuts and portioning of all meat items according to menu specifications, developing innovative meat-based menu items in partnership with our Executive Chef and Sous Chef, maintaining food safety standards, managing inventory levels, mentoring junior staff in butchery techniques, and liaising with suppliers for high-quality meats.
The ideal candidate will have a culinary qualification from a recognized institution along with current certification in Food Safety and Hygiene. You should possess proven experience as a Chef de Partie or Demi Chef de Partie with expertise in butchery, extensive knowledge of various meat cuts and preparation techniques, strong leadership skills, excellent knife skills, attention to detail, proficiency in inventory management and cost control, as well as fluency in English (knowledge of Arabic or other languages is a plus).
